Teriyaki tofu rice bowls

Ingredients
- 14 oz extra-firm tofu
- 1½ cups jasmine rice
- 1 head broccoli
- 2 carrots
- 1 cup frozen edamame
- 4 green onions
- ½ cup teriyaki sauce
- 1 tbsp cornstarch
- 1 tbsp sesame seeds
- 2 tbsp vegetable oil

Method
- Start the rice. Press the tofu, cut into cubes and toss with the cornstarch.
- Fry the tofu in oil until crisp on all sides, 10 minutes. Steam the broccoli and edamame.
- Toss the tofu in the teriyaki sauce until glazed.
- Build bowls with rice, tofu, broccoli, edamame and shredded carrot, topped with green onions and sesame seeds.
