Potato and cauliflower curry (aloo gobi)

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 1 head cauliflower
- 1½ lb yellow potatoes
- 1 yellow onion
- 3 cloves garlic
- 1 tbsp fresh ginger
- 1 can diced tomatoes
- 1 cup frozen peas
- 1½ cups basmati rice
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 2 tbsp vegetable oil

Method
- Start the rice. Soften the onion in oil; add garlic, ginger, curry powder and turmeric for 1 minute.
- Add cubed potato, cauliflower florets, tomatoes and 1/2 cup water. Cover and cook 20 minutes, stirring now and then.
- Stir in the peas for the last 3 minutes and season well.
- Serve with rice.
