Easy chicken tikka masala

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 1½ lb boneless chicken thighs
- 1 yellow onion
- 3 cloves garlic
- 1 tbsp fresh ginger
- 1 can tomato sauce (15 oz)
- ¾ cup heavy cream
- ½ cup Greek yogurt
- 1½ cups basmati rice
- 2 tbsp garam masala
- 1 tbsp vegetable oil

Method
- Coat the cubed chicken in yogurt and 1 tbsp garam masala. Start the rice.
- Brown the chicken in oil; set aside. Soften the onion, garlic and ginger, then add the remaining spice.
- Add the tomato sauce and simmer 10 minutes; stir in the cream and chicken and simmer 8 more.
- Serve over basmati rice.
