Coconut red lentil dal

Ingredients
- 1½ cups red lentils
- 1 can coconut milk
- 1 can diced tomatoes
- 1 yellow onion
- 3 cloves garlic
- 1 tbsp fresh ginger
- 5 oz baby spinach
- 1 lemon
- 1½ cups basmati rice
- 2 tsp ground turmeric
- 2 tsp garam masala
- 1 tbsp vegetable oil

Method
- Start the rice. Soften the onion in oil, then add the garlic, ginger, turmeric and garam masala.
- Add the rinsed lentils, tomatoes, coconut milk and 2 cups water. Simmer 20 minutes until the lentils collapse.
- Stir in the spinach and season with lemon juice and salt.
- Serve over rice.
