One-pot lemon chicken orzo

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 1½ lb boneless chicken thighs
- 1½ cups orzo
- 1 yellow onion
- 3 cloves garlic
- 2 lemons
- 5 oz baby spinach
- 3½ cups chicken broth
- 2 oz parmesan
- 1 tsp dried oregano
- 2 tbsp olive oil

Method
- Season the chicken with oregano and salt and brown in oil 4 minutes per side. Set aside.
- Soften the onion and garlic in the same pot, then stir in the orzo for 1 minute.
- Add the broth and the zest of one lemon, nestle the chicken back in, cover and simmer 12 minutes until the orzo is tender.
- Stir in the spinach, parmesan and the juice of both lemons. Check the chicken is cooked through (165°F) and serve.
