Weeknight spaghetti bolognese

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 1 lb ground beef
- 1 lb spaghetti
- 1 yellow onion
- 2 carrots
- 3 cloves garlic
- 1 can crushed tomatoes (28 oz)
- 2 tbsp tomato paste
- 2 oz parmesan
- 1 tsp dried oregano
- 2 tbsp olive oil

Method
- Finely chop onion and carrots; soften in oil 6 minutes. Add garlic.
- Add the beef and brown well. Stir in tomato paste, then crushed tomatoes and oregano.
- Simmer 25 minutes, splashing in pasta water if it gets thick.
- Toss with cooked spaghetti and grate parmesan over the top.
