Big-batch beef chili

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 1½ lb ground beef
- 2 cans kidney beans
- 1 can crushed tomatoes (28 oz)
- 1 yellow onion
- 1 green bell pepper
- 3 cloves garlic
- 1 cup shredded cheddar
- 3 tbsp chili powder
- 2 tsp ground cumin
- 1 tbsp olive oil

Method
- Soften onion and pepper in oil 6 minutes. Add the beef and brown.
- Stir in garlic, chili powder and cumin for 1 minute.
- Add tomatoes and drained beans. Simmer, partly covered, 40 minutes.
- Top bowls with cheddar.
