Hearty red lentil soup

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 1½ cups red lentils
- 1 yellow onion
- 2 carrots
- 2 celery stalks
- 3 cloves garlic
- 1 lemon
- 1 can diced tomatoes
- 6 cups vegetable broth
- 1 crusty loaf
- 2 tsp ground cumin
- 2 tbsp olive oil

Method
- Soften diced onion, carrot and celery in oil 6 minutes. Add garlic and cumin.
- Add rinsed lentils, tomatoes and broth. Simmer 20 minutes until the lentils collapse.
- Blend half the soup for body, season and finish with lemon juice.
- Serve with crusty bread.
