Mujadara (lentils and rice with crispy onions)

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 1 cup brown or green lentils
- 1 cup long-grain rice
- 3 large yellow onions
- 1 cucumber
- 1 pint cherry tomatoes
- 1 lemon
- 1 bunch fresh parsley
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- ⅓ cup olive oil

Method
- Simmer the lentils in salted water 15 minutes until just tender; drain.
- Meanwhile fry the thinly sliced onions slowly in the oil until deep brown and crisp, 25 minutes. Lift out half.
- Stir the rice, cumin and cinnamon into the remaining onions, add the lentils and 2 cups water, cover and simmer 18 minutes.
- Top with the crispy onions and serve with a cucumber, tomato and parsley salad dressed with lemon.
