Smoky black bean burrito bowls

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 1½ cups long-grain rice
- 2 cans black beans
- 1 can sweet corn
- 1 red bell pepper
- 1 red onion
- 2 limes
- 1 avocado
- 1 bunch cilantro
- ½ cup salsa
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tbsp olive oil

Method
- Cook the rice and stir in lime juice and chopped cilantro.
- Saute the pepper and half the onion in oil 5 minutes; add the beans, paprika and cumin and warm through.
- Char the corn in a dry pan.
- Build bowls with rice, beans, corn, avocado, salsa and the rest of the onion.
