Crispy black bean tacos

Ingredients
- 2 cans black beans
- 8 corn tortillas
- 1 cup shredded cheddar
- 1 avocado
- 1 lime
- 1 bunch cilantro
- ½ cup salsa
- 1 tsp ground cumin
- 2 tbsp vegetable oil

Method
- Mash the drained beans roughly with cumin, salt and a squeeze of lime.
- Spread beans and a little cheese on half of each tortilla and fold.
- Fry the tacos in oil over medium heat until crisp, 2 to 3 minutes per side.
- Serve with sliced avocado, salsa and cilantro.
