Black bean stuffed sweet potatoes

Ingredients
- 4 sweet potatoes
- 1 can black beans
- 1 cup frozen corn
- 1 red onion
- 1 avocado
- 1 lime
- 1 bunch cilantro
- ½ cup salsa
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tbsp olive oil

Method
- Heat oven to 425°F. Prick the sweet potatoes and bake 45 minutes until soft.
- Warm the beans and corn with the cumin, chili powder and diced onion in oil.
- Split the potatoes open and fluff the insides.
- Pile in the beans and top with avocado, salsa, cilantro and lime.
