Slow cooker pulled pork sandwiches

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 3 lb pork shoulder
- 1 yellow onion
- 1 cup BBQ sauce
- ½ cup apple cider vinegar
- 8 burger buns
- 1 bag coleslaw mix
- ⅓ cup mayonnaise
- 2 tbsp brown sugar
- 1 tbsp smoked paprika

Method
- Rub the pork with sugar, paprika and salt. Set on sliced onion in the slow cooker with the vinegar.
- Cook on low 8 hours (or high 5) until it falls apart.
- Shred, drain off most of the liquid and stir in the BBQ sauce.
- Toss the slaw with mayo and a splash of vinegar. Pile onto buns.
