Turkey and rice stuffed peppers

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 4 large bell peppers
- 1 lb ground turkey
- 1 cup long-grain rice
- 1 yellow onion
- 1 can diced tomatoes
- 1 cup shredded mozzarella
- 1 tsp Italian seasoning
- 1 tbsp olive oil

Method
- Heat oven to 375°F. Cook the rice. Halve and seed the peppers.
- Brown the turkey with the onion; stir in tomatoes, seasoning and the rice.
- Pack the filling into the peppers, cover with foil and bake 25 minutes.
- Uncover, top with mozzarella and bake 10 minutes more.
