White chicken chili

Good for meal prep: this reheats well, so cook a double batch and you've got tomorrow's dinner too.
Ingredients
- 1½ lb boneless chicken breasts
- 2 cans cannellini beans
- 1 can diced green chiles
- 1 yellow onion
- 3 cloves garlic
- 1 lime
- 4 cups chicken broth
- 1 cup frozen corn
- 4 oz cream cheese
- 2 tsp ground cumin
- 1 tbsp olive oil

Method
- Soften the onion and garlic in oil, then stir in the cumin.
- Add the broth, green chiles, beans and whole chicken breasts. Simmer 20 minutes, then shred the chicken.
- Return the chicken with the corn and cream cheese and stir until creamy, 5 minutes.
- Season with lime juice and salt.
