Ingredients

  • 1½ lb boneless chicken breasts
  • ¾ cup roasted cashews
  • 1 red bell pepper
  • 1 head broccoli
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 1½ cups jasmine rice
  • 3 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil

Method

  1. Start the rice. Cut the chicken into bite-size pieces and toss with the cornstarch and a pinch of salt.
  2. Stir-fry the chicken in hot oil until golden, 5 minutes; set aside. Add the broccoli, pepper, garlic and ginger and cook 3 minutes.
  3. Return the chicken with the soy sauce, hoisin, honey and 2 tbsp water and toss until glossy.
  4. Stir in the cashews and serve over rice.
