Sweet and sour pork

Ingredients
- 1¼ lb pork tenderloin
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow onion
- 1 can pineapple chunks
- 1½ cups jasmine rice
- 3 tbsp ketchup
- 3 tbsp rice vinegar
- 2 tbsp soy sauce
- 3 tbsp brown sugar
- 3 tbsp cornstarch
- 2 tbsp vegetable oil

Method
- Start the rice. Cube the pork and toss with 2 tbsp cornstarch and a pinch of salt.
- Fry the pork in hot oil until golden and cooked through, 6 minutes; set aside.
- Stir-fry the peppers and onion 3 minutes. Add the pineapple with its juice, ketchup, vinegar, soy sauce, sugar and the rest of the cornstarch mixed with 2 tbsp water.
- Bubble until thick and glossy, return the pork and serve over rice.
