Turkey, sweet potato and black bean skillet

Ingredients
- 1 lb ground turkey
- 2 sweet potatoes
- 1 can black beans
- 1 red bell pepper
- 1 yellow onion
- 1 avocado
- 1 cup shredded Mexican cheese
- ½ cup salsa
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tbsp olive oil

Method
- Cook the diced sweet potato in oil, covered, stirring now and then, until nearly tender, 10 minutes.
- Add the turkey, onion and pepper and cook until the turkey is browned. Stir in the chili powder and cumin.
- Add the beans and salsa and simmer 5 minutes.
- Scatter with cheese, cover until melted and serve with avocado.
