Ingredients
- 1 lb ground pork
- 1½ cups jasmine rice
- 2 carrots
- 1 cucumber
- 1 bunch cilantro
- 1 jalapeño
- 1 lime
- 3 cloves garlic
- 2 tbsp soy sauce
- ¼ cup rice vinegar
- ¼ cup mayonnaise
- 1 tbsp sriracha
- 1 tbsp brown sugar

Method
- Start the rice. Toss the shredded carrot and sliced cucumber with the vinegar, a pinch of sugar and salt to quick-pickle.
- Brown the pork with the garlic, then add the soy sauce, the rest of the sugar and the lime juice.
- Stir the sriracha into the mayonnaise.
- Build bowls of rice, pork and pickled vegetables, topped with cilantro, sliced jalapeño and sriracha mayo.
